Inside Tanuki, eighteen hours of slow-simmered broth, twelve wooden stools, and one long neon sign do most of the talking. Our pork bones come from a single farm in the valley, our noodles are cut fresh each morning, and the chashu rests overnight in a soy, mirin, and ginger bath. We open late. We close Sundays. The rest is ladle, bowl, and steam.
